Does a lip grip hurt the fish?

Used properly, less than a hand in the gills does. The rule is to support the fish body with your other hand and keep it horizontal - never hang a large fish vertically from its jaw, which can damage the jaw and the spine. For a fish you intend to release, less time out of the water matters more than anything else.

What can I use it on?

Any fish with a firm lower jaw - queenfish, kingfish, trevally, barracuda, snapper, grouper, Nile perch, tigerfish. It is particularly valuable on toothy or spiny fish, which are the ones you least want to hold by hand.

Will it work on very big fish?

It will grip them, but a lip grip is not a lifting tool for a very heavy fish. Support the body, keep the fish horizontal, and for anything really large, leave it in the water alongside the boat and unhook it there.

Does it have a scale built in?

Is stainless steel really necessary?

They do different jobs. A net brings the fish out of the water; a grip holds it while you work. On a boat with a high side, use both - net it aboard, then grip it for unhooking.

How do I look after it?

Rinse in fresh water after every sea trip and dry it. Work the jaws and the trigger a few times while rinsing so water gets into the mechanism, and put a drop of light oil on the pivot. Salt in the mechanism is what seizes these tools.
