Do these guarantee protection from a snake bite?

No, and nobody should sell them as if they did. They put a tough barrier over the part of the leg most strikes reach - the lower leg and ankle - which meaningfully reduces risk. They do not cover your feet, thighs or hands, and no gaiter can be guaranteed against every snake or every strike.
