The yellow cleat, and the one most riders should be on. SM-SH11 gives 6 degrees of float – 3 degrees either side of centre, pivoting around a centred point – which is enough for the knee to follow its own path through the pedal stroke rather than being held to the pedal’s idea of straight.
Shimano position it for riders new to clipless pedals, riders with knee pain, and riders with limited flexibility. That covers most people, and it is why SM-SH11 is the cleat supplied as standard with most Shimano SPD-SL pedals – if your pedals came with cleats in the box, these are almost certainly what they were.
The generous float also makes learning to unclip far more forgiving. With 6 degrees of movement before the release begins, there is a margin for a slightly wrong heel angle that a fixed cleat does not give you.
